Oat and Currant Cookies
I made these yesterday
  • 125g unsalted butter
  • 80g caster sugar
  • 80g light muscovado sugar
  • 1 egg
  • splash vanilla extract
  • 200g plain flour
  • half tsp salt (make sure its fine ground)
  • half tsp bicarbonate of soda
  • quarter tsp ground cinnamon
  • 60g oats
  • 100g currants (or other dried fruit of your choice)

The method works best using an electric mixer with paddle attachment:

Preheat the oven to 170C / 325F / Gas 3

Cream together the butter and sugars until light and fluffy

Beat in the egg and vanilla

sift the flour, salt, bicarbonate of soda, cinnamon and oats into a bowl and mix (i do this in the scales bowl) then beat into the wet ingredients.

Mix in the currants till evenly dispersed

Arrange equal amounts of dough across 2 buttered baking tracy (use parchment also if your trays aren’t non stick) – i found a tablespoon of dough each makes around 18 cookies

Bake in the preheated oven for about 12 – 15 mins – cooking time will vary depending on your oven – they must be slightly soft when you take them out (but not wobbly) and will harden as they cool

Cool for about 5 mins on the trays then transfer to a wire rack
